Krampouz Plancha Double taste test: (almost) professional quality

Ease of use

Like the billig of the brand, the Plancha Saveur double impresses with its weight of more than 15 kg. It is therefore not a device that you store after each use and you can also leave it in a summer kitchen without fear as it is IPX4 certified and thus must be able to withstand rain. This robust design is mainly due to the materials from which the Plancha Saveur double is constructed. Krampouz has mainly used stainless steel, although there is a bit of plastic on the feet and handles.

The Plancha Flavor double measures 74 x 38 x 23 cm for 17 kg.

Unlike the feet of the Baking tray Pro from Lagrange, those of the Plancha Saveur are not adjustable in height. The knobs, two in number on this version equipped with as many independent cooking zones, allow to choose a temperature between 50 and 300°C and are graduated every 50°C. We would have appreciated intermediate benchmarks, but it is always much more accurate than a simple power setting, as found on most consumer planchas.

The materials are of high quality, but the workmanship is not always (the Krampouz logo is not straight).

Each controller is accompanied by a heating indicator and Krampouz recommends preheating for 10 minutes. Just like with a stainless steel frying pan, you can use the water drop test to find out if the plate is up to temperature: if the water evaporates, it’s not ready, if the water forms balls. Food can then be used, but for vegetables, fish and even very thin pieces of meat it may be better to grease the plate beforehand.

In the absence of a non-stick coating, the food will stick to the stainless steel and you have to let the Maillard reaction do its job before you can peel it, otherwise bits will be left on the plate. Cuts that are too thin run the risk of overcooking, but large pieces caramelized in this way will retain their juices. Non-stick coatings are much easier to handle, but you cook drier. Stainless steel also has the advantage of being much more resistant and metal utensils can then be used without fear.

We can extinguish the leftovers and scrape off the plate with a spatula and deposit it in the bin at the front. This is removable and extends over the entire width of the plate. It is attached using notches on the anti-projection edges. These few centimeters high do not offer foolproof protection and you should not install the Plancha Saveur too close to a wall. Note that Krampouz offers an optional cover, not only to protect the plate between uses, but also to prevent protrusions to the back by securing it to the edge. A trolley and cover can also be purchased.

Cook

The Plancha Saveur Double benefits from a total power of 3200 W, evenly distributed over two resistances, allowing independent cooking zones. For example, you can choose a temperature of around 150°C on the left half of the plate to cook vegetables or fish, and heat it up to 200 or even 250°C for a tasty piece of meat on the right side. With Krampouz’s Plancha you can also set the temperature up to 300°C – we even measured up to 340°C on the surface of the plate by heating it up to the maximum. This is almost as much as what we had noted on the Baking tray Pro from Lagrange.

In general, the temperature selected with the thermostat should rather be seen as a minimum temperature. The Plancha Saveur double, like all planchas, switches on its resistors intermittently to stabilize the temperature of the plate, but variations should then be noted. Nevertheless, the high inertia of the stainless steel plate used by Krampouz makes it possible to limit it to just below 50°C by setting the thermostat to 230°C (the reference temperature for our tests).

This may seem high, but we noticed up to a hundred degrees difference on entry-level planchas with very thin cast aluminum plates. Only the QPL665 the Riviera & Bar really outperformed on this point with temperatures between 220 and 250°C. The heat distribution is also very good in the middle of the Krampouz baking tray. However, keep in mind that the edges of the plate stay much colder than the middle, and especially that the Plancha Saveur double takes some time to heat up.

Launching at maximum power, we had to wait 7 min 39 s for the plate to reach the required 230°C. This is, of course, the disadvantage of a thick plate, and we can also add that stainless steel is not an excellent conductor of heat. We had also noticed quite a long warm-up time with the Baking tray Prothe only other stainless steel model in our comparison, while the Baking tray Time from Senya, for example, requires only 2 minutes of preheating, and the Tefal Colormania hardly any more. In passing, remember that Krampouz recommends preheating for 10 minutes.

Ease of maintenance

Whatever the manufacturers say, stainless steel remains more difficult, or at least technically, to clean than a non-stick coating on which a wipe of the sponge is often enough to clean it. The caramelization of food colors the plate and leaves residues that are difficult to remove. The easiest way is to work into the still hot (or lukewarm) plate by placing cold water or ice cubes on it. As for a sauce, the thermal shock helps to loosen the juices and residue. But make no mistake: finding a completely clean plate always requires a little elbow grease, even with a scrubbing brush.

Stainless steel makes it possible to use scouring pads, but also metal spatulas for scraping if necessary; small scratches do not affect the properties of the plate. You can also use white vinegar or baking soda to remove burnt residue, but we regret that the Plancha Saveur double plate cannot be removed for soaking. Then you should have found a sufficiently large sink, you will say…. It should also be noted that the anti-splash edges are not removable, unlike those of the Riviera & Bar QPL665and that it can be difficult to clean the corners if stubborn dirt is found there.

With regular quenching, all you need to do is rub a little to find a clean plate.

Only the drip tray is removable, but it is better to wait until you have cleaned the plate to remove it. It thus makes it possible to recover the water used for defrosting, but is not very practical. The handles have a tendency to loosen and cause the bucket to swing, which can lead to minor accidents. This is all the more true as the edge on the side of the plate is not very high. Once detached, the tray can be washed by hand or in the dishwasher, but the length makes things a bit more complicated.
